I love beetroot. I only discovered it recently as until then I was only used to pickled beetroot that my Mum eats - yuk. I like to roast it with carrots and baby onions, especially with a joint of beef on top.

I am definitely going to try beetroot in veg smoothies and some of the other recipes you suggest.

I like the idea of roasting beetroot with other veggies as you did. Did you peel and chop it first?
