There doesn't seem to be much online about Ub's career. There is a tv documentary that Disney produced, entitled The Hand Behind the Mouse, which covers Ub's life and work. There is a companion book available; try Amazon. The book is okay, though for information on Iwerks cartoons this entry is about as thorough (if I may say so).
Only some Iwerks cartoons are available on video or DVD; I don't think anyone controls the copyrights on them.
