Ajo Blanco
A very simple meal but so healthy that people have it to recover from hangovers or when feeling weak or unwell. It is common in Andalusia during summer.
Ingredients (Serves 4 - 6)
Traditional:
(For a litre)
- One or two cloves of garlic (depending on your taste).
- About 100 g of raw almonds.
- 200 g of country bread (white bread from the day before, not crunchy).
- Half a glass of olive oil, (extra, cold pressed)
- Three tblspns of vinegar, cider or a good sherry
- Peeled muscatel grapes, about five per plate.
- Around 750 ml of water
- 1 tbsp of salt.
Method
Pour a glass of water in a large bowl, add all other ingredients bar the grapes. Mix (with an electric mixer) until you get a paste. Dilute with the rest of the water, then put it into the fridge to cool. On serving the cold soup, add the peeled grapes to the separate plates/bowls.
Don't throw away any leftovers, the soup will be good for a few days.
There are a few changes I often make to the original recipe. For example, you could exchange the bread with apples. Try roasted almonds, or use sesame instead. Any grape variety is OK.
