Chaiwallah's revised recipe for Good Masala Chai, try it and see!

Grind together 50 grams of green or white cardamoms, 20 grams of black pepper, 10 grams of cloves and 20 grams of cinnamon. One dessertspoon of this mixture is added to enough water for a teapot for two people. Add an equal amount of milk. Add at least two tablespoons of sugar and three teabags/teaspoons of strong Indian tea. Grate and add a lump of fresh root ginger, 20 grams, about the size of your thumb. Bring to the boil and simmer till well stewed. Strain and serve. Ideally in very small unglazed earthenware cups. Voila. Alter this recipe to taste.
